Today’s Happy Hour drink comes to us from one of our favorite lounges in Walt Disney World, the Tambu at Disney’s Polynesian Resort.
Although the “Lapu Lapu” is probably the most well known drink at the Tambu, the “Backscratcher” has to be a close second. A fruity concoction with a kick, if you haven’t had a chance to try it yourself, we expect you’ve at least seen this fun drink with it’s namesake backscratcher tucked into it being sipped by other patrons.
For the home version of the Backscratcher, put some ice in your glass and Bartender Kate says:
1 (1.5 fluid ounce) jigger dark rum (e.g. Myer’s Original Dark)
1 (1.5 fluid oz) jigger light rum (e.g. Bacardi Superior Light)
Passion Fruit Juice to almost fill (e,g. Ceres, available at most “health/specialty” groceries like Whole Foods or Trader Joes)
1 (1.5 fluid ounce) jigger whiskey (e.g. Jack Daniels Tennessee Whiskey)
Pour rums in glass, add Passion Fruit juice to fill – not quite to the top, then float (top with) the jigger of whiskey.
Add a backscratcher and paper umbrella for the full effect. If your backscratcher didn’t make it home from Disney your last trip, you might try your local dollar store. Those lovely paper umbrellas can be found at most party supply stores.
